This field contains the percentage of the Gross Weight of the BOM (bill of materials) component that is wasted during
preparation and cooking. The program uses the contents of the field to calculate the Net Weight of
the component.
The program retrieves this information from the Wastage % field on the Hospitality Item Card but
you can change it.
You cannot fill in this field if the component is a recipe (bill of materials).
