The purpose of the BOM versions is to be able to have ingredients in a BOM item (Bill of Material item), which can be selected on or off, depending on the BOM version selected in the bill of material base item. This feature is mostly needed in hospitality where you might have different ingredients in a base item depending on seasons for example.
